With Good Reason

It really weirds me out to cut into the flesh of what used to be a living being. A chicken breast is one thing - so far removed from the feathered, clucking thing it once belonged to - but this, a whole side of a cow, butcher’s hole just about where it’s ear can go… I am distinctly American in my squeamish reaction to it. I used to buy the precut strips of leather before It became too expensive. They were easier, morally. Like a hamburger or a chicken nugget. 

I have been thanking each side of leather I buy; promising to make pretty things out of it. Pretending it is a noble death indeed to have your body, flesh, bones used for the benefit of others. We bury our dead in the ground but more than likely, no part of this cow was wasted in such a manner. 

I will cut this cow as quickly as I can. It is less depressing in smaller chunks.
